Roasted Beet Hummus

Ingredients

  • 2 small beets, peeled, diced, and cooked (steamed or in the instant pot)
  • 2 cans chickpeas
  • 4 tbsp lemon juice
  • 2 cloves garlic
  • 2 tbsp tahini
  • salt and pepper
  • olive oil

Directions

  1. Blend cooked beets in food processor
  2. Add remaining ingredients except olive oil and blend until smooth
  3. Drizzle olive oil as it continues to blend
  4. If it is too thick, add a bit of water
