Red Beans and Rice

Ingredients:

  • Brown Rice, cooked (4 cups)
  • Yellow Onion, diced (lg.)
  • Celery, diced (4 stalks)
  • Green Bell Pepper, diced (sm.)
  • Tomatoes (diced (14.5 oz.)
  • Kidney Beans, drained (30 oz.)
  • Olive Oil (1 tbsp.)
  • Garlic, minced (2 tsp.)
  • Stock (1 cup)
  • Cayenne Pepper (.5 tsp.)
  • Paprika (1 tsp.)
  • Oregano (1 tsp.)
  • Thyme (1 tsp.)
  • Bay Leaves (2)
  • Salt (1 tsp.)
  • Black Pepper (.5 tsp.)

Directions:

  1. Saute Bay Leaf, Onion, and Garlic in Olive Oil.
  2. Add Celery and Green Bell Pepper until soft.
  3. Add Kidney Beans, Tomatoes, Stock, Cayenne Pepper, Paprika, Oregano, Thyme, Salt, and Black Pepper.
  4. Simmer 20 minutes until sauce thickens.
  5. Serve Beans over Rice.
