Ingredients:
- Brown Rice, cooked (4 cups)
- Yellow Onion, diced (lg.)
- Celery, diced (4 stalks)
- Green Bell Pepper, diced (sm.)
- Tomatoes (diced (14.5 oz.)
- Kidney Beans, drained (30 oz.)
- Olive Oil (1 tbsp.)
- Garlic, minced (2 tsp.)
- Stock (1 cup)
- Cayenne Pepper (.5 tsp.)
- Paprika (1 tsp.)
- Oregano (1 tsp.)
- Thyme (1 tsp.)
- Bay Leaves (2)
- Salt (1 tsp.)
- Black Pepper (.5 tsp.)
Directions:
- Saute Bay Leaf, Onion, and Garlic in Olive Oil.
- Add Celery and Green Bell Pepper until soft.
- Add Kidney Beans, Tomatoes, Stock, Cayenne Pepper, Paprika, Oregano, Thyme, Salt, and Black Pepper.
- Simmer 20 minutes until sauce thickens.
- Serve Beans over Rice.
