Ingredients:
- 1 Tbsp Oil
- 1 large Onion (chopped)
- 1 Tsp Garlic Paste
- 16 Ounce Mushroom (Sliced)
- 1 bunch Asparagus (trimmed and chopped into 2 inch pieces)
- 1 small Potato (Peeled and cubed)
- ½ Tsp Black Pepper
- ½ Tbsp Salt
- ¼ Tsp Rosemery
- ¼ Tsp Oregano
- 3 Cups Vegetable Stock
- 1 Tbsp Nutritional Yeast
Directions:
- Sauté onions 3-4 minutes until clear
- Add garlic and fry until golden
- Add mushrooms, asparagus, potatoes, vegetable broth, nutritional yeast, and seasoning
- Bring to a boil and simmer until potatoes are tender, around 15 minutes
