Mushroom Asparagus Soup

Ingredients:

  • 1 Tbsp Oil
  • 1 large Onion (chopped) 
  • 1 Tsp Garlic Paste
  • 16 Ounce Mushroom (Sliced) 
  • 1 bunch Asparagus (trimmed and chopped into 2 inch pieces) 
  • 1 small Potato (Peeled and cubed)  
  • ½ Tsp Black Pepper
  • ½ Tbsp Salt
  • ¼ Tsp Rosemery
  • ¼ Tsp Oregano
  • 3 Cups Vegetable Stock
  • 1 Tbsp Nutritional Yeast

Directions:

  1. Sauté onions 3-4 minutes until clear
  2. Add garlic and fry until golden
  3. Add mushrooms, asparagus, potatoes, vegetable broth, nutritional yeast, and seasoning
  4. Bring to a boil and simmer until potatoes are tender, around 15 minutes
