Zucchini and Tomato Pasta

Ingredients:

  • Zucchini, quarter slices (1.5 lbs.)
  • Vine Tomatoes, wedges (1.5 lbs.)
  • Pasta (12 oz.)
  • Garlic, minced (1 tsp.)
  • Basil (2 tbsp.)
  • Olive Oil (2 tbsp.)
  • Parmesan Cheese

Directions:

  1. Boil Pasta
  2. Saute Garlic in Olive Oil.
  3. Add Zucchini and cook until tender.
  4. Add Tomatoes and Basil, cook until wilted.
  5. Serve over pasta and top with Parmesan.
