One Pot Pasta with Tomato

Ingredients:

  • Onion, diced (medium)
  • Tri-color Rotini (12 oz.)
  • Fire Roasted Diced Tomatoes (15 oz. can)
  • Garlic, minced (2 tsp.)
  • Crushed Red Pepper (.25 – .5 tsp.)
  • Oregano, dried (2 tsp.)
  • Basil, dried (1 tbsp.)
  • Olive Oil (2 tbsp.)
  • Vegetable Stock (4.5 cups).

Directions:

  1.  Put all ingredients in a covered pot cook until pasta is cooked and most of the liquid is absorbed, stirring occasionally.
