Ingredients:
- Onion, diced (medium)
- Tri-color Rotini (12 oz.)
- Fire Roasted Diced Tomatoes (15 oz. can)
- Garlic, minced (2 tsp.)
- Crushed Red Pepper (.25 – .5 tsp.)
- Oregano, dried (2 tsp.)
- Basil, dried (1 tbsp.)
- Olive Oil (2 tbsp.)
- Vegetable Stock (4.5 cups).
Directions:
- Put all ingredients in a covered pot cook until pasta is cooked and most of the liquid is absorbed, stirring occasionally.
