Garlic Pasta with Roasted Tomatoes

Ingredients:

  • Grape Tomatoes, halved (1 qt.)
  • Pasta (1 lb.)
  • Onion diced (med) or Shallots (2)
  • Garlic, minced (4 tsp.)
  • Olive Oil
  • Salt
  • Black Pepper
  • Flour (4 tbsp.)
  • Milk, warmed (2.5 cups)

Directions:

  1. Toss Tomatoes in Olive Oil and Salt
  2. Place on Parchment Paper lined cookie sheet cut side up.
  3. Bake at 400 degrees for 20 minutes.
  4. Boil Pasta.
  5. Saute Onion and Garlic in Olive Oil.
  6. Whisk in Flour.
  7. Slowly add Milk and whisk in.
  8. Add Salt, Black Pepper, and Tomatoes.
  9. Serve over Pasta.
