Potato and Cauliflower/Peas Curry

Ingredients:

  • Potatoes, peeled and cubed (2.5 lbs)
  • Cauliflower or Peas (1 lb.)
  • Onion, chopped (lg.)
  • Ginger (2 in.)
  • Turmeric (1 tbsp.)
  • Salt (2 tsp.)

Directions:

  1. Saute Onions and Ginger.
  2. Add Turmeric and Salt.
  3. Add Potatoes and mix until coated.
  4. Add .25 cups water (or more as necessary), cover, and cook for a few minutes.
  5. Add Cauliflower or Peas and cook, covered until potatoes are soft.
