Veggie Muffins

Ingredients:

  • Carrots, shredded (1 cup)
  • Spinach, thawed (1 cup)
  • Chickpea Flour (1 cup)
  • Oat Flour (1.25 cups)
  • Cheddar Cheese (.25 cups)
  • Olive Oil (1 cup)
  • Water (1 cup)
  • Baking Powder (2 tsp.)
  • Salt (1 tsp.)
  • Black Pepper (.5 tsp.)

Directions:

  1. Steam Carrots and Vegetables and let dry.
  2. Mix Chickpea Flour, Oat Flour, Baking Powder, Salt, and Pepper.
  3. Mix Oil and water and add to other ingredients.
  4. Mix in Cheese.
  5. Grease and Flour muffin tray.
  6. Add half of batter, then Spinach and Carrots, then the other half of batter.
  7. Bake at 350 degrees for 30 minutes.
  8. Cool on cooling racks.
