Frittata

Ingredients:

  • Eggs (8)
  • Spinach, thawed and drained (10 – 20 oz)
  • Plum Tomatoes, diced (0-10 oz.)
  • Onion, diced (medium)
  • Salt (.5 tsp.)
  • Garlic, minced (1 tsp.)
  • Olive oil (.25 cups)
  • Parmesan (.5 cups)
  • Crushed red Pepper (.25 tsp.)

Directions:

  1. Coat large cast iron skillet with Olive Oil.
  2. Saute Onion, Garlic, and Crushed Red Pepper.
  3. Add 20 oz of Spinach and Tomatoes.
  4. Beat Eggs with Salt and add to skillet.
  5. Sprinkle Parmesan on top.
  6. Bake at 350 degrees for 20 minutes.
