Ingredients:
- Eggs (8)
- Spinach, thawed and drained (10 – 20 oz)
- Plum Tomatoes, diced (0-10 oz.)
- Onion, diced (medium)
- Salt (.5 tsp.)
- Garlic, minced (1 tsp.)
- Olive oil (.25 cups)
- Parmesan (.5 cups)
- Crushed red Pepper (.25 tsp.)
Directions:
- Coat large cast iron skillet with Olive Oil.
- Saute Onion, Garlic, and Crushed Red Pepper.
- Add 20 oz of Spinach and Tomatoes.
- Beat Eggs with Salt and add to skillet.
- Sprinkle Parmesan on top.
- Bake at 350 degrees for 20 minutes.
