Ingredients:
- Eggs (8)
- Ricotta Cheese (1 cup)
- Green Onions, sliced (2)
- Grape Tomatoes, chopped (.25 cups)
- Monterey Jack, shredded (.33 cups)
- Cayenne Pepper (.5 tsp.)
- Salt (1 tsp.)
- Black Pepper (.5 tsp.)
Directions:
- Whisk Eggs, Ricotta, Cayenne, Salt.
- Add Green Onions, Tomatoes, and Black Pepper.
- Grease Muffin tin.
- Fill 8-12 cups with egg mixture.
- Bake at 350 degrees for 10 minutes.
- Remove from oven and sprinkle cheese on top.
- Bake for 10 or 12 minutes.
- Let cool for 5 minutes before serving.
