Pasta Vegetable Salad

Ingredients:

  • Red Bell Pepper, diced medium (2)
  • Yellow Squash, 1 inch strips (1 lb.)
  • Asparagus, 1 inch strips (1 lb.)
  • Carrots, 1 inch sticks (1 lb)
  • Roma Tomatoes, diced (1 lb.)
  • Pasta (1 lb.)
  • Black Olives,, sliced ( 8 oz.)
  • Basil, Fresh (1 lb.)
  • Garlic, diced (4 cloves)
  • Olive Oil (2 tbsp.)
  • Salt (1 tsp.)
  • Black Pepper (1 tsp.)
  • Vegetable Stock (.5 cups)

Directions:

  1.  Saute Garlic in Olive Oil.
  2. Add carrots and cook covered until partially soft.
  3. Add Bell Pepper and Squash and continue cooking until partially soft.
  4. Add Asparagus and cook until all veggies are cooked.
  5. Remove from heat and add tomato, Salt, and Black Pepper.
  6. Place in 9 X 13 baking dish and bake at 400 degrees for 20 minutes, stirring halfway.
  7. Boil Pasta.
  8. Mix Pasta, Veggies, Stock, and Black Olives.
