Sugar Cookies, Frosted

Ingredients:

Cookies

  • Flour (2.5 cups)
  • Powdered Sugar (1.5 cups)
  • Butter, softened (1 cup)
  • Egg (1)
  • Vanilla (1 tsp)
  • Almond Extract (.5 tsp)
  • Baking Soda (1 tsp)
  • Cream of Tartar (1 tsp)

Icing

  • Powdered Sugar (3 cups)
  • Milk (3-5 tbsp)
  • Vanilla (.25 tsp)
  • Food Coloring
  • Colored Sugar or Sprinkles

Directions:

  1. Beat Eggs with Powdered Sugar, Butter, Vanilla, and Almond Extract.
  2. Stir in Flour, Baking Powder, and Cream of Tartar.
  3. Divide dough in half and make into 2 disks.
  4. Wrap in Plastic Wrap and refrigerate for 2 hours.
  5. Roll out each disk on lightly floured surface .25 inches thick.
  6. Cut with 2-2.5 inch cookie cutters.
  7. Place on ungreased cookie sheet at least 2 inches apart.
  8. Bake at 375 degrees for 7-8 minutes, until edges are light brown.
  1. Beat Powdered Sugar, Milk, and Vanilla.
  2. Tint with Food Coloring
  3. Add Milk if too thick.
  4. Spread icing on partially cooled cookies.
  5. Add Sprinkles.

Apple Crisp with Oats

Ingredients:

  • Apples, peeled and thinly sliced (8 large)
  • Brown Sugar (1.5 cups)
  • Flour (1 cup)
  • Old Fashioned Oats (1 cup)
  • Cinnamon (2 tsp)
  • Nutmeg (1.5 tsp)
  • Salted Butter, softened (.75 cups)
  • Vanilla Ice Cream (optional)
  • Caramel Sauce (optional)

Directions:

  1. Mix Brown Sugar, Flour, Oats, Cinnamon, and Nutmeg.
  2. Cut in softened Butter to make streusel.
  3. Grease a 9×13 inch pan.
  4. Place Apple slices on the bottom.
  5. Sprinkle the streusel over the Apples.
  6. Bake at 375 degrees for 35-40 minutes until apples are fork tender.
  7. Serve with Ice Cream and Caramel Sauce.

Plum Torte

Ingredients:

  • Purple Plums, halved and pitted (12)
  • Unsalted butter, soft (.5 cups)
  • Sugar (1 cup)
  • Flour, sifted (1 cup)
  • Eggs (2)
  • Salt, optional (pinch)
  • Baking Powder (1 tsp)
  • Cinnamon (1 tsp)
  • Lemon Juice

Directions:

  1. Cream Butter and Sugar.
  2. Beat in Flour, Eggs, Salt, and Baking Powder.
  3. Place batter in an 8-10 inch springform pan.
  4. Place Plums, skin side up on top of the batter.
  5. Sprinkle lightly with Lemon Juice and Sugar.
  6. Sprinkle with Cinnamon
  7. Bake at 350 degrees for 60 minutes.
  8. Serve warm or chilled.

Sugar Cookies

Ingredients:

  • Egg (1)
  • Flour, sifted (3 cups)
  • Butter, softened (1 cup)
  • Sugar (1 cup)
  • Baking Powder (.75 tsp.)
  • Salt (.25 tsp.)
  • Milk (1 tbsp.)
  • Powdered Sugar (for rolling dough)

Directions:

  1. Cream Butter and Sugar.
  2. Mix in Egg and Milk.
  3. Separately mix Flour, Baking Powder, and Salt.
  4. Combine the two and mix.
  5. Refrigerate for two or more hours (possibly in multiple containers).
  6. Sprinkle Powder Sugar on rolling surface and roll dough out .25 inches thick.
  7. Use cookie cutters to make desired shapes and transfer to parchment covered baking sheet, leaving room for cookies to expand.
  8. Bake for 7-6 minutes at 375 degrees.
  9. Let cool on baking sheet for 2 minutes before transferring to cooling rack.

Sour Cream Chocolate Chip Cookies

Ingredients:

  • Semi Sweet Chocolate Chips (24 oz.)
  • Sour Cream, Kosher (8 oz.)
  • Eggs (4)
  • Butter, softened (.5 lbs)
  • Margarine, softened (.25 lbs.)
  • Sugar (2 cups)
  • Vanilla (1 tsp.)
  • Flour, sifted (5 cups)
  • Salt (1 tsp.)
  • Baking Powder (3 tsp.)
  • Baking Soda (.5 tsp.)

Directions:

  1. Cream together Butter, Margarine, and Sugar.
  2. Add Eggs, Sour Cream, and Vanilla, and mix thoroughly.
  3. Separately mix Flour, Salt, Baking Powder, and Baking Soda,
  4. Combine and mix thoroughly.
  5. Add Chocolate Chips and mix into batter.
  6. Refrigerate overnight.
  7. Spoon onto quick release foil covered cookie sheets (12-15 cookies)
  8. Bake two sheets at 350 for approximately 12 minutes, swapping top and bottom half-way.  Approximately 10 minutes if only using one sheet at a time.

Rice Krispie Treats

Ingredients:

  • Butter (.25 cups)
  • Marshmallow Fluff (2.5 cups)
  • Rice Krispies Cereal (5 cups)

Directions:

  1. Melt Butter in large saucepan over low heat.
  2. Add Fluff and continue cooking over low het stirring until well combined (about 5 minutes).
  3. Remove from heat.
  4. Add Cereal and stir until well coated.
  5. Using butter spatula or wax paper, press evenly into buttered 9×13 pan.
  6. When cool, cut into squares.

Raspberry Jam

Ingredients:

  • Raspberries, mashed (4 cups)
  • Sugar (4 tsp.)

Directions:

  1. Boil Raspberries for two minutes.
  2. Add Sugar and boil for four more minutes.
  3. Remove from Heat.
  4. Mix for minutes.

Peanut Butter Blondies

Ingredients:

  • Peanut Butter, Creamy (.75 cups)
  • Roasted Unsalted Peanuts (.5 cups)
  • Canola Oil (.33 cups)
  • Brown Sugar (1 cup)
  • Milk (.25 cups)
  • Flour (1 cup)
  • Salt (.5 tsp.)
  • Vanilla (2 tsp.)
  • Baking Powder (.5 tsp.)

Directions:

  1. Mix Peanut Butter, Oil, and Brown Sugar.
  2. Mix in Vanilla and Milk.
  3. Separately, mix Flour, Salt, and Baking Powder.
  4. Combine the two and knead by hand.
  5. Transfer to a 9×9 baking dish.
  6. Press Peanuts into top of dough.
  7. Bake at 350 degrees for 22-25 minutes.

Pancakes

Ingredients:

  • Flour (2 cups)
  • Eggs (2 cups)
  • Milk (2 cups)
  • Butter, softened (2 tbsp.)
  • Sugar (2 tbsp.)
  • Baking Powder (2 tsp.)

Directions:

  1. Blend together until all lumps are gone.
  2. Cook on pre-heated gridle on high heat.
  3. Flip when top has a lot of bubbles.

Oatmeal Cranberry White Chocolate Chip Cookies

Ingredients:

  • Butter, softened (1 cup)
  • Light Brown Sugar (1 cup)
  • White Sugar (1 cup)
  • Eggs (2)
  • Rolled Oats (1.5 cups)
  • White Chocolate Chips (6 oz.)
  • Dried Cranberries (4 oz.)
  • Flour, sifted (3 cups)
  • Baking Powder (1 tsp.)
  • Baking Soda (1 tsp.)
  • Salt (1 tsp.)
  • Vanilla (2 tsp.)

Directions:

  1. Cream together Butter, Brown Sugar, and White Sugar.
  2. Stir in Eggs and Vanilla.
  3. Separately mix Flour, Baking Soda, Baking Powder, and Salt.
  4. Add the Flour mixture to Butter and Sugar mixture and mix thoroughly.
  5. Gently mix in Oats, White Chocolate Chips, and Cranberries
  6. Place spoonfuls on parchment covered baking sheets (12-15)
  7. Bake at 350 degrees for 10-12 minutes, rotating once.
  8. Let cool for 2-3 minutes before moving onto cooling racks.

Koa

Ingredients:

  • Milk Powder (1 cup)
  • Condensed Milk (14 oz. can)
  • Butter (.5 cups)

Directions:

  1. Melt Butter in Condensed Milk
  2. Stir in Milk Powder
  3. Microwave until it begins to bubble
  4. Cool

Frozen Yogurt, Mint

Ingredients:

  • Yogurt (2 cups)
  • Mint, chopped (1 bunch)
  • Sugar (.75 cups)
  • Salt (.5 tsp.)
  • Honey (1 tbsp.)
  • Chocolate Chips (1 cup)

Directions:

  1. Combine Sugar, Honey, Mint in .75 cups water and boil for two minutes, until sugar is dissolved.
  2. Let cool for 1 hour.
  3. Strain out leaves and whisk into Yogurt.
  4. Process in Ice Cream Make until almost done.
  5. Add Chocolate Chips and finish processing.

Frozen Yogurt

Ingredients:

  • Yogurt, plain (2 cups)
  • Guar Gum (1 tsp.)
  • Sugar (.67 cups)
  • Vanilla (.5 tsp.)
  • Flavoring Options
    • Fruit (1 cup)
    • Peanut Butter and Milk (.5 cups each)

Directions:

  1. Mix all ingredients.
  2. Place in ice cream maker and run until done.
  3. Freeze.

Cream Cheese Frosting

Ingredients:

  • Cream Cheese, softened (3 oz.)
  • Butter, softened (6 tbsp.)
  • Powdered Sugar (3 cups or .75 lbs.)
  • Vanilla (1 tsp.)
  • Milk (3 tbsp.)

Directions:

  1. Mix all ingredients together.

Pumpkin Squares

Ingredients:

  • Eggs (4)
  • Pumpkin Puree (1 cup)
  • Sugar (2 cups)
  • Canola Oil (1 cup)
  • Salt (.5 tsp.)
  • Cinnamon (.5 tsp.)
  • Baking Soda (1 tsp.)
  • Baking Powder (1 tsp.)
  • Flour, sifted (2 cups)
  • Cream Cheese Frosting (optional, see recipe)

Directions:

  1. Beat Eggs
  2. Mix in Oil, Sugar, and Pumpkin Puree
  3. Separately mix Salt, Cinnamon, Baking Soda, Baking Powder, and Flour.
  4. Pour in an 11×17 jelly roll pan.
  5. Bake at 350 degrees for 15 to 20 minutes.
  6. Optional – Spread on Cream Cheese frosting when Pumpkin Squares start to cool; but are still warm.

Cherry-O Cream Cheese Pie

Ingredients:

  • Graham Cracker Pie Crust
  • OR
    • Graham Cracker Crumbs (1.25 cups)
    • Sugar (.25 cups)
    • Softened Butter (.25 cups)
  • Cream Cheese
  • Sweetened Condensed Milk (15 oz.)
  • Lemon Juice (.33 cups)
  • Vanilla Extract (1 tsp.)
  • Cheery Pie Filling (1 can)

Directions:

  1. Use pre-made Crust or follow steps 2-4.
  2. Mix Graham Cracker Crumbs, Butter, and Sugar
  3. Pour into 9 in. pie pan and press firmly against side and bottom.
  4. Bake at 375 degrees for 8 minutes.
  5. Whip Cream Cheese until fluffy.
  6. Gradually add Condensed milk and beat until well blended.
  7. Add Lemon Juice and Vanilla and blend well.
  8. Pour into cool crust and chill at least 2-3 hours (or overnight).
  9. Spread Cherry Pie Filling over top.

Apple Bake

Ingredients:

  • Apples, peeled and sliced thin (4 medium to large.)
  • Egg (1)
  • Brown Sugar (.5 cups)
  • Flour (1 cup)
  • Sugar (.75 cups)
  • Cinnamon (1 tsp.)
  • Salt (.25 tsp.)
  • Butter (2 tbsp.)

Directions:

  1. Mix Apple and Brown Sugar in square baking dish.
  2. Separately, mix Flour Sugar, Cinnamon, and Salt.
  3. Beat Egg and Butter, then stir into Flour mixture.
  4. Spread Over Apples.
  5. Bake at 375 degrees until top is gold and crisp.

Banana Bread

Ingredients:

  • Bananas, ripe (2-3)
  • Egg (1)
  • Flour, sifted (2.5 cups)
  • Sugar (1 cup)
  • Baking Powder (3.5 tsp.)
  • Salt (1 tsp.)
  • Canola Oil (3 tbsp.)
  • Milk (.75 cups)
  • Walnuts, chopped OPTIONAL (1 cup)

Directions:

  1. Mix all ingredients in a large blender (or use electric mixer).
  2. Grease and flour loaf pan.
  3. Pour batter into loaf pan.
  4. Bake 60-65 minutes, rotating halfway, until toothpick comes out clean.
  5. Immediately remove from pan and place on cooling rack.

Popcorn, Stovetop

Ingredients:

  • Popcorn kernels (.5 cups)
  • Canola oil (3 tbsp.)

Directions:

  1. Put Canola Oil and 3 kernels in 8 qt. stock pot on medium-high heat.
  2. As soon as a kernel pops, remove from heat and add remainder of kernels.
  3. Wait 30 seconds and return to heat, and cover, vented.
  4. When kernels begin to pop, shake pot gently.
  5. When there are more than seconds between pops, remove from heat.

Apple Crisp

Ingredients:

  • Apples, tart, peeled and chopped (6 cups)
  • Flour (.75 cups + 2 tbsp.)
  • Old Fashioned Oats (.75 cups)
  • Brown Sugar (.5 cups)
  • Granulated Sugar (.5 cups)
  • Cinnamon (.5 + .5 tsp.)
  • Butter, cold and cut in pieces (.5 cups)
  • Lemon Juice (1 tsp.)
  • Cooking Spray

Directions:

  1. Mix .75 cups Flour, Oats, Brown Sugar, .5 tsp. Cinnamon until blended.
  2. Cut in Cold Butter until crumbly.
  3. In separate bowl, mix Apple, Granulated Sugar, 2 tbsp. Flour, .5 tsp. Cinnamon, and Lemon Juice.
  4. Spray 2 qt. baking dish with cooking spray.
  5. Put apple Mixture on the bottom and cover with oatmeal streusel.
  6. Bake 30-35 minutes at 375 degrees, until topping is golden brown and juices are bubbling.
